Tailgate food that survives the truck ride.
Whether it's college Saturday or pro Sunday, football weekends split the same way: the parking lot before a home game, or the living room when your team's on the road. Either way the job is the same — feed a crowd for four hours without missing anything. Here’s the math for both.
The lot rule: cook at home, finish at the lot
A tailgate is a party with no kitchen, no counter space, and no second trip to the store. Everything that matters happens at your house the night before. The grill at the lot is for dogs, burgers, and reheating — not for cooking anything from scratch that can go wrong. The best tailgate menus are one hero (pulled pork, chili, smoked wings) made entirely ahead, plus grill items that cook in minutes, plus cold sides that ride in the cooler.
- Travels great: pulled pork in foil pans, chili in an insulated carrier, finished wings, slaw, pasta salad, brownies, anything in a slow-cooker liner.
- Travels badly: anything fried (soggy in 20 minutes), composed salads, anything that needs plating, ice cream. Obviously.
Quantities for the long pregame
A tailgate runs 3–4 hours, which changes the math: people graze the whole time. Count 1½ mains per person and a side portion per person per hour after the first:

Pork shoulder cooks down by roughly half — that’s why the raw number looks like too much. It isn’t. And in early-season heat, use the summer ice rule: 2 lbs per person, one cooler for drinks and a separate one for food. The drink cooler gets opened forty times — keep the food in its own cooler so it actually stays cold.
The kickoff-relative timeline
- Friday night — the hero cooks: pork in the oven or smoker, chili made (it’s better tomorrow anyway), sides boxed, coolers staged.
- Kickoff −5 hours — load: food cooler, drink cooler, grill, chairs, table, trash bags. Trash bags. Every veteran tailgater just nodded.
- Kickoff −4 hours — arrive, set up, drinks on ice.
- Kickoff −3 hours — grill on: dogs and burgers in waves, pork reheating covered.
- Kickoff −1 hour — last call from the grill, start packing the non-essentials.
- Kickoff −30 min — coals dead, coolers shut, walk to the gate. The lot food is done; the stadium takes it from here.
The away-game version: the watch party
Half the weekends, the game comes to your living room instead — and the menu strategy flips from "travels well" to "holds well." The winner is anything in a slow cooker: chili, pulled pork sliders, a warm dip. It’s ready at kickoff and still ready in the fourth quarter, and nobody misses a play carving anything.
- Wings: 6–8 per person alongside a spread (a dozen each if wings are the whole menu).
- The slider tray: 2 per person as part of a spread — one 10-lb pork shoulder covers 20 people with buns to spare.
- Timing: food out 30 minutes before kickoff — after kickoff, everyone’s on the couch — as it should be.

Ten pounds of raw pork shoulder — it cooks down to 5–6 lbs, which covers 1½ sandwiches apiece over a long pregame.
Charcoal or propane at the lot?
Propane wins on speed and shutdown (many lots also restrict coals). If it must be charcoal for the flavor, bring water for the coals and know your lot’s rules.
What about the kids at the tailgate?
Same rule as every party: kids count as half portions — except for dogs and dessert, where they mysteriously count as double. Split the difference: 1 dog per kid and extra brownies.
